For the Casserole:

  • 1 lb ground beef

  • 4 medium potatoes, peeled and thinly sliced

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese (plus more for topping)

  • 1/4 cup milk

  • Salt and pepper, to taste

  • 1 tsp dried thyme (optional)

  • 1 tsp paprika (optional for a bit of heat)

For the Topping:

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley (optional for garnish)


Instructions

1. Preheat Oven & Prepare Baking Dish:

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.

2. Cook the Beef:

  1. In a large skillet, brown the ground beef over medium-high heat, breaking it apart as it cooks.

  2. Add the diced onion and minced garlic and cook until softened, about 3-4 minutes.

  3. Drain any excess fat from the beef, then stir in the cream of mushroom soup, sour cream, milk, paprika, thyme, salt, and pepper.

  4. Mix well and cook for another 2-3 minutes to combine the flavors.

3. Assemble the Casserole:

  1. Layer the sliced potatoes evenly in the bottom of the prepared baking dish.

  2. Spread the beef mixture over the potatoes, smoothing it into an even layer.

  3. Top with cheddar cheese, ensuring it covers the entire casserole.

4. Bake:

  1. Cover the casserole with foil and bake for 40 minutes.

  2. After 40 minutes, remove the foil and continue baking for an additional 15 minutes, or until the cheese is golden and bubbly, and the potatoes are tender when pierced with a fork.

5. Serve & Enjoy:

 

  1. Once out of the oven, sprinkle the casserole with Parmesan cheese and garnish with fresh parsley if desired.

  2. Let it rest for a few minutes before serving.
